What happened
General ovThere was a pedestal fan that was stationed between the Proofer and Oven. The Oven Operator was in the process of adjusting the fan to move the air flow in a different direction. There was damage to the guard at the lower bottom of the fan. The employee did not see this and when they moved the fan to redirect the air flow their finger went through the guard and made contact with the moving fan blade.en operator duties
