29 CFR 1910.37(b)(4):     Signs were not posted along the exit access indicating the direction of travel to the nearest exit and exit discharge when the direction of travel to the exit or exit discharge was not immediately apparent:    (a) At The Patisserie Bakery & Deli in the cake area the route to the nearest exit was not marked and was not immediately apparent; and    (b) At The Patisserie Bakery & Deli in the bread area the route to the nearest exit was not marked and was not immediately apparent.

Vertical mixers did not comply with paragraphs (e)(1)(i), (iii), (ix) and (x) of this section. Mixers with external power application did not have all belts, chains, gears, pulleys, sprockets, clutches, and other moving parts completely enclosed:      (a) At The Patisserie Bakery & Deli in the cake batter mixing area, the guard for the Hobart Mixer #7 was not attached exposing the mixer blade;    (b) At the Patisserie Bakery & Deli in the bread mixing area, the guard for the Blue Screw Mixer on the left had an opening 5" wide and approximately 14" high exposing the mixer blade; and    (c) At the Patisserie Bakery & Deli in the bread mixing area, the guard for the Blue Screw Mixer on the right had 5 openings 5" wide and approximately 14" to 16" high exposing the mixer blade.  Welds on the guard were broken leaving sharp edges also exposing the mixer blade.

29 CFR 1910.263(j)(1)(iii):     Cover(s) over the knife head of reciprocating blade slicer(s) were not provided with an interlocking arrangement so that the machine could not operate unless the cover was in place:    (a) A cover for the #6 1" Oliver gravity bread slicer, SN 124663, was not on the slicer and interlocked to prevent operation unless cover was in place;    (b) A cover for the #7 1/2" Oliver gravity bread slicer, model 797-32, SN 173848, was not on the slicer and interlocked to prevent operation unless cover was in place;    (c) A cover for a 5/8" Oliver gravity bread slicer, model 797-48, SN 176560, was not on the slicer and interlocked to prevent operation unless cover was in place;    (d) A cover for the #8 5/8" Oliver gravity bread slicer, model 797-G, SN 114346, was not on the slicer and interlocked to prevent operation unless cover was in place; and    (e) A cover for a 1/2" Oliver gravity bread slicer, model 797-32, SN 151239, was not on the slicer and interlocked to prevent operation unless cover was in place.
