Employee States: Employee was behind the service counter in the Deli Department; they had to remove the skin off a prosciutto. While removing the skin off the prosciutto with the knife over the deli sink the knife slipped off the prosciutto and stabbed the employees left forearm. The employee stepped away into the backroom to hold the wound from bleeding more.
