On [REDACTED] at approximately [REDACTED] employee was starting to trim our 30 month prosciutto. I was hold the prosciutto still with my left hand holding at the end ( foot) side with my arm about 8 10 inches high and 6 8 inches away from the prosciutto on an angle. With our boning knife in my right hand. As I began to cut under the rind (skin) the knife went through fairly easy and unexpected. Coming out of the prosciutto and into my left forearm. My forearm began to bleed profusely and I held it to my body as I went into our backroom to the hand sink where I grabbed paper towels and applied pressure.

Employee States: Employee stated he was working in the production area trimming prosciutto using a 6 inch black butchers ' knife when the knife slipped and gashed his left forearm.
