What happened
Maintenance adjusted an operational valve that increases and decreases the flow of chicken in oil. When it was opened left over water residue in the pipe from previous cleaning was unintentionally introduced into the cooking oil causing it to bubble. Cooking oil then splashed out of the end of the fryer on to the employees lower left leg.
