88.4:  The employer did not furnish employment and a place of employment
which was free
from recognized hazards that were causing or likely to cause death or
serious physical harm
to employees in that employees were exposed to:
(a)Hardees Kitchen Area - Employees were exposed to hazards of lacerations
and amputations during the slicing operations and disassembling/
reassembling
procedures for cleaning and sanitizing the Berkel Slicer.  This slicer was
not
properly maintained because component parts were missing such as  but not
limited to the Slicing Table Handle and Shift Lever Knob. This condition
was
noted on or about 07-30-02.
"Among other methods, one feasible and acceptable abatement method to
correct this Hazard is to order and replace these missing component parts
through the Designated Berkel Service Location per the Owner/Operator
Manual for the Berkel Slicer Model 919/1".
Hardees Kitchen Area - Employees were exposed to hazards of lacerations
and amputations during the slicing operations and
disassembling/reassembling
procedures for cleaning and sanitizing the Berkel Slicer. Employees were
not
trained as stated in the Owner/Operator Manual, Posted Warning Wall Charts
or Safety Warnings Labels adhered to the machine. The employer could not
provide a Owner/Operator Manual and the Warning Wall Charts were not
posted at the time of this inspection.  This condition was noted on or
about 07-
30-02.
Among other methods, one feasible and acceptable abatement method to
correct this hazard is to obtain a Owner/Operator Manual for this Berkel
Slicer
919/1; Train the employees; post all Warning Wall Charts and apply all
Safety
Warnings in accordance to this manual .
