Nevada Revised Statute 618.375(1):  The employer did not furnish
employment and a place of
employment which was free from recognized hazards that were causing or
likely to cause death
or serious physical harm to employees:
The employer failed to ensure kitchen equipment was properly maintained:
a.In the Main/Monterrey kitchen, a "Wolf" grill had an accumulation of
grease and
food. It was also missing the controlling knobs for the burner. The
employees
were exposed to a fire hazard due to the grease build up on the grill.
Reference: Installation & Operation Owner's Manual, page 6, General
Recommendations:" Number 1. All moving parts must be checked for wear and
lubricated, if necessary. Replace if excessively worn." Number 4. All
places
where oil, grease, or food can accumulate must be kept clean at all times".
b.In the Main kitchen, chinese line, a "Cleveland Steam Craft Ultra 5 had
no
gasket, and steam was coming out from the door.

Before each use of the steamer, inspect the drain and screen for blockage.
Inspect
the door gasket assembly, and slide racks for proper installation and
cleanliness.
